- 1 tsp. coarse salt (or Kosher)
- 115 grams unsalted butter (cold, cut into 1 cm, ½ inch pieces)
- 90 mL heavy cream (1/4 cup plus 2 tablespoons, I did not have any and used whole milk)
- 2 egg yolks
- 1 batch compote (Rhubarb, recipe below)
- 1 kg rhubarb stalks
- 250 grams dark brown sugar
- 1 orange (finely grated)
