This is one of my favourite pie recipes. I’ve now made this 3 or 4 times and it’s always been great. I have found that the pie is better a couple of days after baking. The sugar gets caramelised more it seems. Also found that mixing strawberries with the rhubarb gives a big lift! You can reduce the sugar as you increase the strawberries.
