These are so good. I tripled the recipe and baked them in a jelly roll pan for anniversary reception. If I did that again I would only double the crust and added more Rhubarb. The crust was a bit thick for the amount of filling. They were gone in a flash and everyone loved them.

Followed suggestion to coat rhubarb in cornflour before using, worked well.

these are amazing! the perfect blend of tart and sweet. the crust is so yummy, especially the edges that are chewy and crunchy at the same time. after reading the reviews, i also used the 3 cups of rhubarb. i also added some homemade vanilla extract to the crust mix.

I would make this recipe again. I added one extra cup of rhubarb as suggested in another review and a 1/2 teaspoon of white vanilla.

Excellent- love the chewy shortbread crust, but most of all the rhubarb, which I think I will increase in quantity next time I make. Great recipe, I just wanted to taste more of the delicious rhubarb- I think an extra cup would be just right, with no other changes to any other ingredients.

Delicious!!! Used frozen rhubarb so maybe should have added a bit more flour. I made them for a dinner with visiting family. We ate with our cocktails though 😀. Passed the recipe on to them.
