Subbed out a gluten free flour blend, the mix was the consistency of milk so I panicked and added a 1/4 cup more flour blend . Folding in the egg white thickened it up, but definitely not a thick batter. It baked really nice and formed a dense but airy consistency. All my guests finished theirs and I got seconds, will definitely make again.
