How much should the baguette weigh? The French say 8-9 oz., the American ones tend to be 12-15 oz.
Lovely recipe, made one this morning. (I very much like pre-cooking the rhubarb w/sugar. I cooked it till it was soft but still holding its shape pretty well.) I accidentally used just the right amt. of bread (Italian and wheat French leftovers from freezer), but didn't weigh it beforehand. Ended up with 8-9 oz. (8-9 cups) after drying in convection oven, so don't know how much its dry weight was and would like to know that in advance next time I make it. (And I certainly will.) Thanks.
