Description
This salad is so tasty I could eat a whole bowl full and feel great about it and it’s beautiful too. Between the cool cucumber, tomato and parsley, and the zesty lemon and the spicy oregano, there are a enough health benefits to revitalize you for hours and the veggies taste great doing it.
Ingredients

- 1 English cucumber
- 1 tomato (Medium Sized, I usually buy organic tomatoes if I can)
- 1/4 cup pitted black olives (ferrous gluconate free if you can find them)
- 1/4 cup curly parsley (organic is my preference)
- 1 Tbsp. lemon juice (Fresh Squeezed, I don’t feel it is necessary to buy organic lemons)
- 3 Tbsp. extra-virgin olive oil
- dried oregano (Sprinkle of)
- salt (Sprinkle of, Flakes, or your favorite sea salt)
- black pepper (Sprinkle of)

Directions
- Cut the cucumber into bite sized pieces and add to a medium bowl.
- Slice olives lengthwise and add to the bowl.
- Dice the tomato and add to the bowl.
