- 3 lb. potatoes (small, firm, yellow-fleshed, e.g. Yukon Gold of similar size, skins scrubbed and peels left on)
- 1 yellow onion (medium, chopped)
- 1 1/2 cups water
- 4 tsp. beef bouillon granules
- 1/2 cup white vinegar (add a few dashes of Essig Essenz if you have it)
- 3/4 Tbsp. salt
- 3/4 tsp. ground white pepper (freshly)
- 1 tsp. sugar
- 2 tsp. german mustard (mild, I recommend Düsseldorf Style German Mustard. If you can't get it, use regular yellow mustard)
- 1/3 cup oil (neutral-tasting)
- chives (Fresh chopped, for garnish, optional)

It turned out really well. I used potatoes I had in the house and it just isn’t the same but it was really good. Looking forward to the leftovers tomorrow
