I really enjoyed this, so did my fiancé, and he’s very picky about Mexican rice. I didn’t have onion or jalapeños so I just used about 1/3 of a can of ro-tel tomatoes and chilies. Worked like a charm. Super yummy!!!!

I'm on a low sodium diet due to congestive heart failure so I had to modify the recipe. I didn't use cilantro or the lime due to a blood thinner I take but it was still good. I would definitely recommend this rice. My husband is a picky eater when it comes to mexican food and he liked it.

Very good restaurant style Mexican rice. I forgot to add the cilantro at the end, but that didn't stop people from going back for seconds.
