Description
With spiced ground chicken, hearty black beans, and tons of toppings, these homemade nachos are sure to make your mouth water! The recipe is a Yummly original created by Sara Mellas.

- 1 lb. ground chicken
- 1 Tbsp. extra-virgin olive oil
- 1 tsp. chili powder
- 1 tsp. cumin
- 1 tsp. coriander
- 1/2 tsp. garlic powder
- 1/2 tsp. dried oregano
- 1 tsp. salt
- black pepper (to taste)
- 1 can black beans (drained and rinsed, 15 oz. per can)
- 1 bag corn tortilla chips (16 oz. per bag)
- 1 lb. shredded Mexican cheese blend (1 lb. is about 4 cups)
- 2 tomatoes (large)
- 1/4 red onion
- 1 jalapeno chilies (small)
- 1/4 cup cilantro leaves (fresh)
- 1 avocado
- 2 Tbsp. sliced black olives
- 1/2 lime
- 1/3 cup sour cream

Directions
- Preheat the oven to 400°F.
- Line an extra-large baking sheet with parchment paper.
- Drizzle the olive oil into a large skillet set over medium-high heat. Once the oil is shimmering, add the chicken. Cook, breaking up the chicken as it cooks, for 5-6 minutes. Add the chili powder, cumin, coriander, garlic powder, oregano, salt, and black pepper, and stir to evenly distribute. Add the black beans to the skillet and continue to cook, stirring frequently, until the chicken is cooked through, 1-2 minutes.

Fantastic recipe.
Changes I made:
Replaced the chicken with 1 pound of 85% lean beef
Didn't add cilantro
Didn't add avocado
Didn't add sour cream

The nachos came out extremely delicious! I did leave a few jalapeño seeds to give it an extra kick to each bite!

really good! Eat it right when you finish making it though, it can get a little soggy if left out to long.

This was super good! I made it with ground turkey instead and it was delicious. My husband can’t eat cheese, so we were able to pick and choose which toppings we each liked to put on our sides. We will definitely make it again.

My new favorite nacho recipe! I used sliced white cheddar and feta out of necessity (worked great by the way) but the bean and meat with the oven baking were spot-on good!

Delicious! I didn't put it into the oven like this...I just put toppings on top of meat in same skillet I cooked meat in. Melted the cheese in the oven and the added the rest after.

Fun dinner! The oven baked nachos were so much better than just regular chips. The whole family enjoyed it. I did used grilled chicken that I chunked and seasoned per recipe.

I made a few modifications when I made it earlier this evening - they are as follows:
- 1 pound 85% lean ground beef (would have used chicken thighs, but COVID-19 stole everything from our grocery store)
- "traditional" style round tortilla chips
- seasoning used on meat: red cayenne pepper, chili powder, Kroger steakhouse seasoning, red pepper flakes, and Lowry's salt
All in all, husband approved! Definitely making again!
