- 2 cups adzuki beans (soaked overnight)
- 1 cup bhutanese red rice
- 3 cups chicken stock
- 1 tsp. five spice powder
- 1 tsp. salt
- 1 Tbsp. minced garlic (finely)
- 1 Tbsp. ginger (finely minced or grated)
- 4 chiles (small, red Thai bird, seeds removed, finely chopped)
- 1 bunch scallions (white and green parts, cut on the diagonal, 1/4 inch pieces)
- 2 Tbsp. canola oil (or peanut oil)
- 1 Tbsp. sesame oil
- 2 Tbsp. kecap manis (sweet Indonesian Soy Sauce) You can substitute Hoisin Sauce)
- 1/3 cup dry sherry (or Shaoxing rice wine)
- 1 can water chestnuts (diced)
