  • ginger (1/2 tsp., puree or minced fresh ginger)
  • garlic puree (1/2 tsp., or minced fresh garlic)
  • 1/4 cup chopped fresh cilantro (finely)
  • 3 tablespoons peanut butter (or more, use "natural" low-sugar peanut butter for South Beach Diet)
  • 1 tablespoon lemon juice (fresh squeezed)
  • 2 tablespoons peanut oil
  • 3 tablespoons soy sauce (low sodium is ok)
  • 1 tablespoon hot water (very)
  • 1 tablespoon splenda (sugar, or Agave Nectar)
  • 2 1/2 cups red cabbage (very thinly sliced, use a mandoline to slice the cabbage if you have one)
  • 3/4 cup sugar pea (diagonally sliced sugar, carrots or red bell peppers would also be good, or use a combination of veggies)
  • 1/3 cup green onions (diagonally sliced, scallions)
  • 1 1/2 cups cooked chicken (diced)
  • 2 1/2 tablespoons chopped fresh cilantro (finely)
  • 1/4 cup chopped almonds (finely, or peanuts, I only had almonds, but next time I'd use peanuts)
