- 1 yellow onion (coarsely chopped)
- 4 garlic cloves (thinly sliced)
- 1 piece fresh ginger (peeled and thinly sliced)
- 2 jalapenos (thinly sliced, with seeds)
- 2 Tbsp. red curry paste
- 2 Tbsp. curry powder
- 1 Tbsp. ground cumin
- salt
- 14 oz. garbanzo beans (drained and rinsed)
- 1 head cauliflower (cut into bite size pieces, mine was nearly 3 lbs)
- 1 red bell pepper (seeded and thinly sliced)
- 3 cups vegetable broth
- 1 cup tomato sauce
- 14 oz. unsweetened coconut milk
- jasmine rice (Cooked, for serving)
- sliced green onions
- chopped fresh cilantro

I've made this a couple of times now and it always turns out good. This time I added zucchini.

It was very delicious! My family loved it but it did come out soupy, I wonder how it would turn out if I used coconut cream instead of coconut milk. I did add kale just because it was about to go bad and it was perfect.

Great recipe for an easy dinner! Would recommend less jalapeño if you don’t like it super spicy and less stock if you want it thicker. Would definitely make again!

This was great! I did 3/4 of my 14oz coconut milk and only one jalapeño. That was enough spice for me. I also did a little less broth because I like my curry thicker. Quick dinner with very little hassle except having to break out my blender!

taste was delicious, a bit on the soupier side but it did thicken up more after it cooled. it made A TON though, especially with it served over rice. Next time I will definitely half the recipe.

Although it did turn out soupy this is the best curry that I have made. Great flavor and just spicy enough.

So delicious. Ive made this several times. My hisband loves it. Ive switched all the vegetables (used and ive made it with meat (shrimp or chicken) a few times. Each rime it turns out so delicious and flavorful.

Flavor was great but like other reviews, even with simmering for 45 mins it turned out more watery than desired, and that was using only 1 cup of water with with 3 tsp boullion, rather than 3 cups. Next time I'm just going to add boullion without the water to see how that goes.

This turned out very well, but was also quite soupy(felt like it had too much broth). The picture doesn’t suggest it will turn out that way (like a soup) so just a heads up. Given the soup-like nature of the dish, I put it on top of some rice noodles, which was nice. Can also eat with brown rice.

It turned out very tasty. I did not add the jalapeno since my kids don't care for spicy food.

Wonderful meal- great for big portions, the family loved it! Added less broth to make it a bit thicker - nice to add yogurt lemon and rice when serving

This was delicious with a few minor changes. I added 1 tablespoon brown sugar, decreased the broth by 1 cup (as a previous reviewer suggested), and only used one jalapeño (two would not have been tolerable to my family). I will definitely make it again!

Amazing! I made this for a small get together and everyone loved it! This even tastes good on its own (without rice). Definitely will make again.

Easy and Delicious. I just added all the vegetables I had in my fridge and added quinoa for extra protein

It was great -omitted one jalapeño and would probably omit all jalapeño next time
