- 1 lb. shrimp (raw in-shell, defrosted, peeled and deveined, or ~255g peeled shrimp)
- 1 green onion (rough chopped)
- 1 piece ginger (~5g nub of, grated on microplane or fine minced)
- 1 tsp. kosher salt
- 2 Tbsp. arrowroot starch
- avocado oil (or oil of choice for pan-frying)
- 2 eggplants (Asian, thin, long, halved lengthwise)
- 3/4 lb. baby bok choy (Shanghai, green stem or regular baby bok choy, white stem)
- 1 lb. enoki mushrooms (Mix of)
- 400 grams rice sticks
- 20 tap water
- 2 shallots (small, minced)
- 1/2 inch ginger (knob, grated on microplane or very fine minced OR just cut into several slices and pull out before serving)
- 2 garlic cloves (minced)
- 5 lime leaves (PC Black Label Kefir)
- 2 Tbsp. curry paste (red Thai)
- 1 Tbsp. tomato paste
- 4 cups chicken broth (homemade or good quality store-bought low sodium broth)
- 14 oz. full fat coconut milk
