- 1 1/2 Tbsp. gherkins (minced)
- 1/2 tsp. Sriracha sauce (or more to taste, optional)
- 1 cup red beets (shredded raw, about 1, using the larger holes of box grater)
- 1 cup feta (crumbled mild, preferably sheep's milk)
- 1/4 cup quick-cooking rolled oats (plus a couple more tablespoons more as needed, for GF used certified gluten free rolled oats)
- 1/2 cup green onions (finely chopped, about 3)
- 1/2 cup dill (lightly packed finely chopped)
- 2 large eggs (lightly beaten)
- 2 tsp. green chilies (minced hot, such as serrano, optional)
- 1/4 tsp. fine sea salt
- 1/4 tsp. ground black pepper (freshly)
- 2 Tbsp. extra-virgin olive oil
- 1 lemon (cut into wedges, for garnish, optional)
