- 5 lb. red bliss potatoes (bag of, also called Red Potatoes, leave skins on, wash, cut away any bad parts and cut into 3/4 inch pieces)
- 1 cup chopped celery
- 1/2 cup yellow onion (chopped)
- 2 hard boiled eggs (large, chopped)
- 1/2 cup fresh dill (chopped)
- 1/2 cup mayonnaise
- 1 Tbsp. Dijon mustard
- 1 Tbsp. kosher salt (for boiling the potatoes *see my tips for success below)

Yes, I assembled this delightful red potato salad tonight. My wife is a true potato aficionado, and she gave the recipe a raved review.
I have to admit I did alter the recipe just a little, I added a little celery salt, and probably 1/2 c more mayonnaise.
Also I have just acquired a CanCooker device. This extremely portable cooker uses steam to cook your food items, in 5his case it cooked in 15 minutes

Rushed for time and forgot the dill, but ready-made mirepoix and soft-boiled eggs worked wonders. Fellow diners really liked the crunch of the diced carrots in the mirepoix.

This is by far the best potato salad recipe. I eliminated the egg an used light plain yogurt and mayo. It came out so creamy.
