- 1 dried red chile pepper (small, 1-inch)
- 2 Tbsp. ghee (canola oil or coconut oil)
- 1 tsp. ground cumin
- 3/4 tsp. ground turmeric
- 1/2 tsp. ground coriander
- 1/4 tsp. ground fennel
- 1 onion (small, thinly vertically sliced)
- 1 carrot (julienne cut, a julienne peeler makes this an easy job)
- 4 garlic cloves (minced)
- sea salt (to taste)
- 1/2 cup frozen green peas (thawed)
- 1 Tbsp. fresh lime juice
- 4 lime wedges
