- 1 cup cornmeal (Jimmy Red, – Geechie Boy Mill Brand, I don’t think any other brand is made the same)
- 3 cups water
- 1/2 tsp. sea salt (course)
- 2 Tbsp. unsalted butter
- non stick spray (canola or vegetable)
- 1 1/2 lb. fresh spinach
- 1/2 sweet onion (medium, – sliced very thin on a mandolin)
- 1 garlic clove (– ground to paste)
- 1/2 cup water
- 1 Tbsp. vegetable base
- 3.5 oz. roasted chestnuts (peel, – slightly more than rough chopped)
- fresh ground black pepper (to taste)
- 1 Tbsp. extra-virgin olive oil
- 1 cup grape tomatoes (tiny sweet, – cut in quarters)
- 1 garlic clove (ground to paste)
- 1 Tbsp. basil (fine chopped, – packed really tight)
- 1 Tbsp. extra-virgin olive oil
- 1 Tbsp. balsamic vinegar
- 1 1/2 Tbsp. shaved Parmesan
- sea salt (fresh ground, – to taste)
- fresh ground black pepper (– to taste)
- 4 oz. mozzarella (mild cheese, mild provolone would be great, mascarpone would be great too, I used a mild pepadew cheese)
- 4 ricotta cheese (dollops of fresh made, optional)
