Delicious! Fresh and light. I’m allergic to carrots, substituted finely sliced red peppers.

Enjoyed this refreshing salad. I used mango-infused balsalmic vinegar and drizzled on a teaspoon of grapeseed oil and a teaspoon of sesame oil. This will be a regular in my meal planning as a base for other salad meals.
