It is time to get my goals set for the year. One of the many resolutions, of course, is to continue on the healthy-eating-habits.

I’ve had weight issues since I was a kid, at age seven I was under weight and had many vitamin-deficiencies. I was propped with vitamin-supplements for years. At thirteen, I became overweight and since then it has been a battle to try to lose weight. I’ve done many, many, many diets in my life… I succeed it on all of them, but just momentarily, in the long run I was still failing.

Four years ago, I started to make smart choices at the eating table, I did not lose weight, but I felt much better and healthier. Soon after, I started incorporating more and more healthy foods to my normal menu, and added a fifteen-minute- walk a day and slowly I started to see the change. Slowly I realized that I couldn’t follow the diets I used to when I was younger, and I was definitely not going to give up any of my comfort foods. No compromise!

Nowadays, I still try to lose some pounds here and there, but I don’t torture myself anymore. I’ve set my mind to an 80% healthy-eating –habits and 20% indulging. An-hour-walk a day and substituting when necessary indulgent-foods for low carb intake alternatives, but I will share with you more of this later on.

When I kick off my smart eating I usually start gradually and I maintain it for as long as possible, I plan ahead my indulgencies, so it is guilt-free, I don’t call it the “cheating-day” on the contrary I give it a positive connotation, more like: I’ve been doing very well, this is my reward.

So, I usually start by adding as many vegetable as possible in a meal. I love soups, so that’s how I sneak in the veggies. I do many cream soups (dairy-free).

This recipe was especially surprising, fresh and naturally sweet and it is a recipe that will be a staple on warm-summer days…
