- 1 yellow onion (large, fine dice)
- 3 celery stalks (diced)
- 1 red bell pepper (diced)
- 1 green bell pepper (diced)
- 1 Tbsp. garlic (minced, about 4-5 cloves)
- 2 cups vegetable broth (we used Pacific Organic Vegetable Stock – see notes *)
- 8 oz. tomato sauce
- 1/4 cup water (to rinse out tomato sauce can)
- 1 cup rice (rice of choice, we used brown rice – see notes *)
- 15 oz. red beans (cans, drained and rinsed, we used kidney beans)
- 1 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. dried oregano
- 1/2 tsp. smoked paprika
- 1 1/4 tsp. sweet paprika
- 1/4 tsp. cumin
- 2 tsp. sea salt (+/- to taste)
- 1/4 tsp. black pepper (+/- to taste)
- 1/8 tsp. red pepper flake ( , +/- to taste for level of heat)
- 1/8 tsp. cayenne pepper ( , +/- to taste for level of heat)
