- 2 Tbsp. bacon grease (You can substitute 1 Tablespoon of olive oil + 1 Tablespoon of butter)
- 1 yellow onion (medium, chopped)
- 1/2 green bell pepper (chopped)
- 3 cloves garlic (minced)
- 1 lb. smoked kielbasa (cut into 1/2″ coins)
- 1 shank (smoked ham)
- 1 bay leaf
- celery salt
- black pepper
- cayenne pepper (to taste, I used 1/2 teaspoon)
- 1 tsp. sweet paprika
- 1/4 tsp. smoked paprika
- 1 tsp. oregano
- 1 tsp. thyme
- 5 dashes liquid smoke (optional)
- 2 tsp. worcestershire sauce
- 4 cups chicken broth (+ water to cover)
- 2 scallions (chopped for garnish, optional)
- cooked white rice
