  • 2 tablespoons olive oil
  • 1 pound ground chicken (beef, pork or turkey)
  • 1 diced onion (medium)
  • 1 red pepper (diced)
  • 1 jalapeno pepper (seeded if you don’t this too spicy, and diced)
  • 4 garlic (cloved, minced)
  • 1 cup roasted corn kernels (fire, I use Trader Joe’s frozen corn)
  • 14 ounces diced tomatoes (drained)
  • 1 tablespoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • 3 tablespoons ancho chile powder (or your favorite kind)
  • 1 cup green olives (pitted and sliced deli, I like the ones stuffed with jalapenos)
  • 1 tablespoon soy sauce (This gives a salty flavor and adds richness. No this doesn’t make it taste like Chinese food!)
  • 15 ounces pinto beans (black beans or your favorite beans, rinsed and drained)

  • 4 scallions (thinly sliced)
  • 1/2 cup chopped cilantro
  • 1 1/2 cups sharp cheddar cheese
  • 4 tamales (large, crumbled and thawed if frozen)
  • 3/4 cup sour cream
  • 1 teaspoon ancho chile powder
  • 4 ounces green chiles (diced and rinsed)
