- 2 Tbsp. olive oil
- 1 lb. ground chicken (beef, pork or turkey)
- 1 diced onion (medium)
- 1 red pepper (diced)
- 1 jalapeno pepper (seeded if you don’t this too spicy, and diced)
- 4 garlic (cloved, minced)
- 1 cup corn kernels (fire roasted, I use Trader Joe’s frozen corn)
- 14 oz. diced tomatoes (1 can, drained)
- 1 Tbsp. ground cumin
- 1 tsp. ground coriander
- 1 tsp. dried oregano
- 3 Tbsp. ancho chile powder (or your favorite kind)
- 1 cup green olives (1/2 to, pitted and sliced deli, I like the ones stuffed with jalapenos)
- 1 Tbsp. soy sauce (This gives a salty flavor and adds richness. No this doesn’t make it taste like Chinese food!)
- 15 oz. pinto beans (1 can, black beans or your favorite beans, rinsed and drained)
- salt
- pepper
- 4 scallions (thinly sliced)
- 1/2 cup chopped cilantro
- 1 1/2 cups sharp cheddar cheese
- 4 tamales (3–, large, crumbled and thawed if frozen)
- 3/4 cup sour cream
- 1 tsp. ancho chile powder
- 4 oz. green chiles (1 can, diced and rinsed)
