- 1 lb. red beans (if you’re in Louisiana, only Camellia brand will do)
- 4 cloves garlic
- 1 large onion (very, about 2 cups chopped)
- 4 rib celery
- 1 large bell pepper (about 1 1/2 cups chopped)
- 3 bay leaves
- 2 tsp. thyme
- 1 tsp. oregano
- 1 tsp. red pepper
- 1/2 tsp. freshly ground black pepper
- 2 tsp. chipotle pepper (chopped, canned in adobo, this is not traditional but lends a smoky taste; substitute another tsp. of Liquid Smoke seasoning or 1/4 tsp. oc chipotle powder if you prefer)
- 1 Tbsp. Tabasco Sauce
- 1 tsp. salt (more to taste)
- 1 tsp. liquid smoke (or smoked salt to taste)
- cooked rice (to serve)

this was really good. I think i will use half amount of celery next time. i did add a little creole seasoning as well.

Great flavor very authentic - cant match the texture of the traditional meat recipes but worth the tradeoff
I used smoked paprika and some creole seasoning
Also just some simple hot saice as i personally dont like tobasco flavor
Will definitely make this again

Like your mother, I too ate red beans the way she fixed them, intact, but very flavorful . The way you prepare yours is pretty much like retried beans. While I like your recipe , I still prefer my beans hold.
