I usually use ripe green plantain (yellow when ripe) but I wanted to use up the green. Unlike the green, the ripe needs little to no oil when baking. I didn't realize that so I didn't put enough oil both times I made this. When I sort of accidentally added more oil to a batch and left it long enough to become golden brown, it was delicious! Problem solved!
