- 2/3 cup walnuts (each of raw, and pecans, soaked for 4 hours)
- 1 cup pitted dates
- 1/3 cup raisins
- 2 tsp. canela
- 1/2 tsp. nutmeg
- cardamom
- 1 pinch sea salt
- 1 1/2 tsp. ginger
- 3 1/2 cups carrots (cut into 1″ chunks before measuring)
- 1/2 cup grated coconut (freshly)
- 1/2 cup fresh pineapple chunks
- 2 cups raw cashews (soaked for 2 hours)
- 1/2 cup lemon juice
- 1/2 cup agave nectar
- 2 tsp. pure vanilla extract
- 2/3 cup grated coconut (freshly)
- 2/3 cup coconut oil (melted slowly in oven or on stove)
- 4 Tbsp. coconut milk (I forgot this, so mine was a bit thick)
