I am always on the hunt for *healthy,* non-dairy desserts. My son is vegetarian, so that helps too. I saw this a while back, and finally found ingredients. I found the Birdseye frozen coconut someone else mentioned, and used coconut sugar dissolved in water in place of coconut water (less sweetener needed). As I was reading your anecdote about the fresh pineapple, I decided at the last minute to use the can of organic,100% juice, canned pineapple. Granted, it means the recipe is no longer "raw;" but...set up beautifully (no freezing necessary)! Next time, I would drain/squeeze out the pineapple more, so less liquid-y. It was beautiful, and delicious!! Cannot wait to try the strawberry one, they are just coming into season. Thank you!!

Looks like a cheesecake but save yourself the time and just make a pina colada that way you at least get rum.
