Tasty. Would make this again. I think adjusting salt and lemon juice is harder to gauge with something sweet.

This was a quick and easy recipe. We added some thinly sliced Spanish onion and it turned out very good. Would make it again.

I used lemon juice instead of lime. I also quartered the beets. It came out very good. The orange really gives the zest.

Was wonderful but I made my own dressing. Balsamic vinegar, rosemary, olive oil, and half the juice from an orange and lime with salt and pepper. Also chopped the beets instead of grating them.
