- 1/2 cup egg whites (or 4 large egg whites)
- 1 cup granulated sugar
- 1/4 tsp. kosher salt
- 455 grams unsalted butter (16oz, or four sticks, cold and cut into small pieces)
- 1 Tbsp. pure vanilla extract
- 250 grams dark chocolate
- 1/4 cup cocoa (Black, or dutch process cocoa)
