BRAVO!!! I love trying new recipes! This recipe actually turned out SUPER delicious! YAY! I had enough batter to made 12 regular size cupcakes, and 8 minis. I left the crust out of the minis for my SIL as he is gluten intolerant. (GF graham crackers have yucky ingredients and taste like cardboard!) I also substituted half honey for the sugar (cuz I ran out of sugar!) They turned out with great texture, beautiful color, (perfect for Valentine's Day!) and are really YUMMY, and I love that they don't have a lot of sweetener.
