These were simply divine! I added 1 T fresh lemon juice to the batter and used a variety of jams to change it up - strawberry, apricot and cherry. Apricot was surprisingly good with the lemon. The cookies had a light lemony taste that did not turn bitter from the zest. Great texture - a bit longer in the oven for a crispier cookie or take them out on the earlier end for softer texture. My family loved them and I look forward to making them again for coworkers!
