- 1/2 cup Dutch-processed cocoa powder
- 1/4 cup cocoa powder (black)
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 2 tsp. espresso powder
- 1 tsp. fine sea salt
- 4 large eggs (at room temperature)
- 3/4 cup canola oil
- 2 tsp. pure vanilla extract
- 1 1/4 cups water
- 1/2 cup semi sweet chocolate chips (optional)
- 1/4 cup raspberry preserves (organic, I use Polaner Fruit Spread)
- 1 Tbsp. chambord (raspberry liqueur)
- ganache (Raspberry, Filling**)
- 12 oz. semisweet chocolate chips
- 6 oz. coconut milk (whole-fat, or heavy cream)
- 3 Tbsp. chambord (raspberry liqueur)
- buttercream frosting (tinted pink)
