- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/4 cup unsalted butter (softened)
- 2/3 cup granulated white sugar
- 1 tsp. vanilla extract
- 1 large egg
- 1/2 cup buttermilk (well shaken)
- 1 1/2 cups fresh raspberries (I used a bit more, maybe 1 1/2 cups)
- 1 1/2 Tbsp. white sugar (for sprinkling, course sugar would be good, as well)

The cake was very good. I used an 8 inch pan with higher sides. I had to leave it in the oven longer to cook the middle which gave the sides a nice crunchy texture
Also, cooling the cake completely before cutting meant no soggy bottom. The raspberries sank to the bottom so tossing them in a small bit of flour before adding to the batter might help. I made a raspberry sauce which was just the thing to drizzle on each piece when serving.
Will definately make again.
