Made first Batch as recipe Directed., Found them to be extremely dense and even difficult to mix. So, tweaked the second batch and turned out much better. To original ingredients, Added 1/4 cup of butter and 1/2 cup Sugar. added 1/2 Cup additional Raspberries and 1/2 Cup Chopped Pecans. Filled the Muffin cups to almost full ( and did not overflow during baking) - same baking time. Moist, and more flavorful.

I substituted chocolate chips for the white and deleted the raspberries - yum!

Made these but used cranberries and pecans instead. Also added 1/4c almond milk. They were perfect! I will use this batter as my default muffin batter so I can't go wrong.
