Excellent- I added 1 tsp. Cinnamon and 1 tsp. Pure vanilla. Yielded 18 muffins.

Happy with this! Microwaved for 1:30 and topped with honey and butter. Batter had sat in fridge for two days.

Excellent Recipe!!! I added a few chopped pecans to it and used self-rising flour instead of all-purpose flour leaving out the baking soda and salt. Yes, I will use this recipe again.

Good flavor and super simple to make gets better with time in the fridge
Will try next time with some cinnamon or allspice to add a richer flavor to the mix
