  • 1 egg yolk (from a large egg)
  • 3 whole eggs
  • 2 tablespoons virgin olive oil (extra-)
  • 2 teaspoons kosher salt

  • 6 cloves garlic (minced)
  • 1 cup onions (finely chopped)
  • 1 cup carrots (peeled and finely chopped)
  • 1 cup celery (finely chopped)
  • 1/4 pound pancetta (or bacon, diced)
  • 1 pound ground pork (free-range)
  • 1 pound ground beef (grass-fed)
  • 6 tablespoons double concentrate tomato paste
  • 2 cups canned tomatoes (puréed, I can my own, I would suggest buying something low in sodium)
  • 2 cups whole milk
  • 1 cup white wine (such as Soave or Pinot Bianco, both Italian whites)
