A very enjoyable meal and will definitely make this one again. We used minced beef, pancetta and conchiglie (perhaps nicer using spaghetti rather then conchiglie)? There was a lot of butter/oil and we would have preferred a bit mire tomato sauce but a good recipe overall.

God, this was delicious. Maybe the best part is that slavish adherence to the recipe is NOT necessary. For example, I added minced garlic to the vegetable mix, no problem. Also, I didn’t have ground beef, so I just omitted it, no problem. Substituted chicken stock for beef, no problem. The point is, if you follow the basic recipe, it will still be fabulous. Fresh grated Parmesan and julianned fresh basil are the perfect topping. Lastly, I recommend bucatini pasta, which marries wonderfully with the sauce. You really don’t need anything else, but if you want to impress guests or a date, a simple salad and garlic bread hot from the oven will send this meal over the top. If you need a wine recommendation, go with a full bodied red, such as a Chianti Classico Riserva, a nice Napa Cabernet or Malbec, or an Old Vines Zinfandel.
