- 5 poblano chiles (large)
- 2 Tbsp. olive oil
- 1 rotisserie chicken (meat removed and shredded)

- 1 Tbsp. ground cumin (about a palmful)
- 1 Tbsp. ground coriander (about a palmful)
- 1 1/2 tsp. ancho chili powder (or chili powder blend, about 1/2 palmful)
- 1 tsp. dried oregano (preferably Mexican, lightly crushed, about 1/3 palmful)
- 1/4 tsp. ground cinnamon (a couple of pinches)
- 1 onion (finely chopped)
- 4 cloves garlic (grated or crushed)
- 3 cups turkey stock (or chicken stock, divided)
- 1 Great Northern beans (or, 14- to 14.5-ounce, pinto, drained)
- 15 oz. hominy (1 can, drained, or 1 potato, peeled, diced and parboiled for 5 to 6 minutes)
- 3 Tbsp. cornmeal (masa harina or crushed corn chips)
- hot sauce (mild)
- jalapeño pepper sauce (to taste)
- 1/4 cup cilantro (or parsley, chopped, a small handful)
- 2 Tbsp. lime juice (Juice of 1 lime)

- queso fresco (crumbled or shredded pepper jack)
