- 1 rib celery (with leafy tops, finely chopped)

- 2 garlic (fat cloves, chopped)
- 1 lb. ground beef
- 1/2 lb. ground veal
- 1/2 lb. ground pork
- salt
- ground black pepper (finely)
- 1 bay leaf
- parsley (Herb bundle of ,a few stems ,tied)
- sage (a few stems ,tied)
- thyme (a few stems ,tied)
- 1 cup whole milk
- 1/8 tsp. freshly grated nutmeg
- 1 cup white wine
- 15 oz. Italian tomatoes (one can ,crushed, 2 cups)
- 2 cups chicken stock
- 2 cups beef stock
- parmigiano-reggiano (A chunk of rind of ,cheese ,plus 1 cup and more at table to serve)
- 1 lb. spaghetti (pasta, chitarra, square, guitar-string spaghetti or bucatini, about 500 grams)
