- 1/3 cup breadcrumbs (loosely packed homemade white, or Panko)
- 1/8 cup half and half (or whole milk)
- 1/2 cup ricotta (fresh)
- grated nutmeg (A little freshly, about 1/8 teaspoon)
- 1 lb. ground chicken
- 1 medium egg (plus yolk)
- 1/2 cup parmigiano reggiano cheese (loosely packed freshly grated)
- 1/4 cup chives (finely chopped, and parsley)
- salt
- pepper
- 2 Tbsp. extra virgin olive oil (EVOO)
- 3 carrots (thin spring, peeled and thinly sliced on small bias)
- 1 bunch ramps (whites and greens separated, whites chopped and greens cut into ½ inch pieces, or 2 thin leeks, whites and light greens halved, cleaned and thinly sliced on bias)
- 2 qt. chicken stock (homemade or boxed)
- 1 piece parmigiano reggiano cheese (rind of, optional)
- 3/4 cup fava beans (shelled small, spring peas or edamame)
- 3/4 cup ditalini pasta
- 1 cup spinach (packed coarsely chopped medium-leaf, 1 bundle, trimmed and stemmed)
- 1/2 cup herbs (chopped, such as carrot tops or dill and thinly sliced basil, to serve)
- 1 lemon (to serve)
