- 3 lb. beef chuck (well trimmed, cut into 2-2 ½-inch large cubes)
- 3/4 cup all purpose flour
- salt
- pepper
- 2 Tbsp. safflower oil (or grapeseed)
- 6 slices bacon (meaty, chopped ½ inch)
- 2 onions (chopped)
- 2 rib celery (chopped)
- 1 carrot (chopped)
- 4 cloves garlic (crushed)
- 2 bay leaves (large)
- 1 thyme (bundle, and sage, a small handful of each)
- 1 Tbsp. paprika (a palmful)
- 2 tsp. dry mustard (⅔ palmful)
- 1/4 tsp. ground allspice
- 1/8 tsp. freshly grated nutmeg
- 3 Tbsp. sundried tomato paste (or tomato paste)
- 2 Tbsp. Worcestershire sauce
- 1 1/2 cups lager beer (12 ounces)
- 2 cups beef stock
- 1 3/4 lb. butternut squash (peeled and cut into 2-inch pieces, the large neck of a squash, save the bottom for another meal)
- 2 russet potatoes (large or 3 medium, about 1 ¼ pounds, peeled and cut into 2-inch pieces)
