- 1 cup truRoots Organic Quinoa (uncooked)
- 1/4 cup extra-virgin olive oil
- 2 Tbsp. Santa Cruz Organic Pure Lemon Juice
- 3 Tbsp. honey
- 1/2 tsp. ground thyme
- 1/2 cup dried cherries (coarsely chopped)
- 1/2 cup crumbled feta cheese
- 1/2 cup chopped pecans (coarsely)
- 2 Tbsp. fresh parsley (minced)
- salt
- pepper

Directions
- PREPARE quinoa according to package cooking instructions. Cool to room temperature. Fluff with fork.
- WHISK oil, lemon juice, honey and thyme in large bowl. Add quinoa, cherries, cheese, pecans and parsley. Stir to combine. Season with salt and pepper. Chill.
