  • 500 grams baby carrots (or whole carrots cut into 1inch chunks)
  • 1/2 tsp. chilli powder
  • 1 1/2 tsp. cumin
  • 1 tsp. ground coriander
  • 1 red chilli (medium sized)
  • 2 tsp. Garam Masala
  • 1 Tbsp. agave nectar (or maple syrup)
  • 4 Tbsp. olive oil
  • 1 cup quinoa
  • 2 cups vegetable stock
  • 1 tsp. nutritional yeast (available from health food stores)
  • 1 tsp. soy sauce
  • 1 Tbsp. rice wine vinegar (or apple cider, something non-invasive)
  • 2 Tbsp. oil (light-tasting, such as olive, groundnut, even vegetable)
  • sesame oil (Splash of)
  • salt
  • pepper
