I oven roasted the chayote and Sweet Earth vegan hot dog slices (had no chorizo) and sautéed the onion and mushrooms. I was out of frozen corn and realized that canned tastes better. Without chorizo to add heat, I added sprinkled some cumin, paprika, oregano, & taco seasoning and added some Zubi’s lime crema. It ‘s a good “meal prep” to pack school lunches. We won’t buy Sweet Earth hot dogs anymore; they’re too salty and don’t have good flavor and are expensive.
