- 2 Tbsp. olive oil (divided)
- 1 onion (small, cut in a small dice)
- 1 green pepper (medium sweet, cored, seeds removed and cut in a medium dice - about ½ inch.)
- 1 cup corn kernels ([approx] fresh raw, [about 2 medium ears' worth])
- 1 cup black beans (cooked, rinsed)
- 1 clove garlic (minced)
- 1 tsp. ground cumin ([or more to taste])
- 1 tsp. dried oregano
- 1 Tbsp. hot sauce (like siracha or RedHot)
- 1/2 cup white quinoa (or red)
- 3/4 cup vegetable stock
- 1 medium tomato (cored and diced)
- 1 Tbsp. chopped cilantro (fresh)
- 1 cup cheddar cheese (or a shredded blend, divided)

This turned out better than expected. Delicious and complete meal. Even my mother, who was skeptical, thoroughly enjoyed it. Great addition to a quick weeknight dinner.

This was delicious. I made this for Meatless Monday last night, and it was a big hit! The only modification I made was I omitted the hot sauce (yuck) and after stuffing the zucchini, I baked them for 15 minutes before broiling to brown the cheese. I'm glad I did, because the zucchinis were still quite firm. Everyone loved them; the kids were asking for more (even though I used huge zucchinis from the garden). Will definitely make these again.
