- 2 cups vegetable broth
- 1/2 tsp. garlic powder
- 1/2 tsp. ground cumin
- 1/2 tsp. ground coriander (optional)
- 1 pinch kosher salt
- 1/2 cup red wine vinegar
- 1/3 cup maple syrup
- 1/2 tsp. kosher salt
- 1 Tbsp. water
- 2 Tbsp. chipotle hot sauce (adjust the amount to your taste/heat preference)
- 2 tsp. chili powder (chipotle)
- 1 tsp. garlic powder
- 1 tsp. fresh parsley leaves (roughly chopped)
- 1 tsp. cracked black pepper
- juice (of half a lime)
- 3/4 cup olive oil
- 15 oz. black beans (1 can, drained and rinsed)
- 1/2 cup pepitas (toasted* you can substitute pepitas for sunflower seeds or slivered almonds)
- 1 cup baby spinach (ribboned)
- 1 avocado (large, cubed)
- 1/3 cup red onion (diced)
- 1/2 cup grape tomatoes (cut in halves)
- chopped parsley (Freshly, or cilantro, for garnish, optional)
