- 1 white onion (or medium yellow, chopped)
- 3 carrots (peeled and chopped)
- 2 celery stalks (chopped)
- 2 cups vegetables (chopped seasonal, like zucchini, yellow squash, bell pepper, sweet potatoes or butternut squash)
- 6 garlic cloves (pressed or minced)
- 1/2 tsp. dried thyme
- 28 oz. diced tomatoes
- 1 cup quinoa (rinsed well in a fine mesh colander, use less for a lighter, more broth-y soup)
- 4 cups vegetable broth
- 2 cups water
- 1 tsp. salt (more to taste)
- 2 bay leaves
- 1 pinch red pepper flakes
- freshly ground black pepper
- 15 oz. Great Northern beans (or chickpeas, rinsed and drained)
- 1 cup kale (or more chopped fresh, or collard greens, tough ribs removed)
- 2 tsp. lemon juice (to taste)
- grated Parmesan cheese (Optional garnish: freshly)

I didn't like this. I don't think quinoa makes a good soup. It was bland and the quinoa continued to absorb the liguid in the leftovers no matter how many times I added more.

so good! i just cleaned out the freezer/fridge and dumped whatever I had in there. toddlers smashed on it!

Super delicious recipe! I had to add about 2 extra cups of liquid (2 of water and 2 of broth throughout cooking as the vegetables really soaked up the liquid). I also added a bit more red pepper flakes for an extra kick which was a great way to add complexity to the flavor. Will definitely be making this again.
