This was okay, but I generally like something with more taste. If there is a next time, I would add more dried cranberries to try and get a little more pizzazz.

My meat-loving husband loved this as a main dish! I used spinach instead of kale. There is extra filling but I put that along side the sweet potato and it was all gobbled up! Delicious!

I tweaked this a bit I diced and roasted my sweet potato in the oven then mixed it in at the end. I used spinach in place of kale and pine nuts in place of almonds the dish turned out wonderful. My husband who isn't a fan generally of quinoa had seconds, my 15 year old son ate it without complaint and my 13 year old didn't mind it even though she hates sweet potato. Great way to use up those CSA veggies.

We loved this! Very easy to make. The only thing I'd do next time is double the kale, but we love kale. I added most of the sweet potatoes back in, so there's plenty of left over filling for a side dish another night! Definitely will be making this again. And I did use real butter

This is delicious!!! I haven't even finished putting the stuffing in the sweet potatoes and I Love iit!!! A little time consuming,but def worth it!!!

Okay this dish was really good I tested the kale with quinoa and the taste is almost like a vegan fried rice ;) only difference is cranberries and almonds.. Still making the meal so 4 stars it is

I thoroughly enjoyed this recipe. I would definitely make it again. It does take time, however it is not hard. This is my new thanksgiving dinner!

This is so delish! I'm sitting eating bowl of the filling as the potatoes bake! Only change I made was using real butter.

I had to use chicken broth since I didn't have any vegetable broth on hand, but this turned out delicious, I would definitely make it again. My husband loved it too.
