I really liked this. It was filling but yet not heavy feeling. I will definitely be making this again.

I only had 5 peppers and there wasn't enough stuffing to fill them all. Suggest increasing the beans and quinoa amounts a tad. Also was very garlicy. Could probably reduce the garlic powder amount by half for this small amount of filling. I used freshly charred corn as well.
