  • 3/4 cup sliced green onions (cut on the diagonal)
  • 2 teaspoons olive oil
  • 1 cup quinoa (rinsed well with cold water)
  • 2 cups vegetable stock (I used a 14 oz. can of vegetable broth with a little water added to make 2 cups.)
  • 1 tablespoon soy sauce (use gluten-free Tamari if needed)
  • 2 tablespoons grated Parmesan
