  • 2 1/2 cups cooked quinoa (at room temperature – 1 cup of raw quinoa will get you approx 3 cups of cooked quinoa.)
  • 2 cups chicken broth (vegetable stock or filtered water – You will need this to cook the raw quinoa. I used chicken broth.)
  • 4 large eggs (beaten – Be sure to use large not extra large eggs here)
  • 1/2 teaspoon fine grain sea salt
  • 1/3 cup chopped fresh chives (finely)
  • 1 red onion (medium, finely chopped – I used 1/2 cup, as I’m not a big onion fan)
  • 1/3 cup freshly grated Parmesan (or Gruyere cheese – I used Gruyere cheese)
  • 3 garlic cloves (finely chopped or minced)
  • 1 cup panko breadcrumbs (regular, plus more if needed – I have used both Ian’s regular and whole-wheat panko breadcrumbs, and they both tasted great.)
  • 2 tablespoons extra-virgin olive oil
